A poisonous seed, detoxified. It secretes black tar,
It’s Mocha, chocolatey… are you nuts Andrew?
Not even close. Asia’s take on caviar. Dig into
rice and the spicy Straits Chinese curry. The nut,
buah keluak. The dish, Ayam Buah Keluak.

Wrapped in banana leaf, this galangal spicy fish paste.
Some kind of fish sausage, you say. We call it, otak.
What next? A hearty broth stewed with innards.
Pig’s stomach, liver, kidney, not quite bizarre as
bull’s penis. Chilli mud crabs. Bizarrely good.

More bizarre suggestions. Pig’s ears braised with duck.
Gelatinous chicken feet, served as dim sum. Lovely but
incorrect, sharksfin soup. Crispy duck skin, sans duck,
wrapped with greens. Durian with shaved ice, red beans,
green noodles, infused palm sugar. What a cool sherbet.
